Description
A hearty and nutritious soup made with lentils and fresh vegetables.
Ingredients

- 1 cup dried lentils
- 2 carrots, diced
- 1 onion, chopped
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
- Stir in lentils, diced tomatoes, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30 minutes until lentils are tender.
- Season with salt and pepper.
- Serve hot.
Notes
- Soak lentils for 1 hour before cooking to reduce cooking time.
- Add spinach or kale for extra greens.
