Description

A hearty and nutritious soup made with lentils and fresh vegetables.


Ingredients

Scale
  • 1 cup dried lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Stir in lentils, diced tomatoes, vegetable broth, cumin, and paprika.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes until lentils are tender.
  5. Season with salt and pepper.
  6. Serve hot.

Notes

  • Soak lentils for 1 hour before cooking to reduce cooking time.
  • Add spinach or kale for extra greens.
