- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tsp lemon juice

Instructions
- Boil potatoes in salted water until fork-tender, about 15 minutes.
- Drain and let cool slightly.
- Preheat oven to 450°F (230°C).
- Place potatoes on a baking sheet and gently smash each one with a fork.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 25-30 minutes until crispy and golden.
- Mix mayonnaise, garlic, lemon juice, and salt to make the aioli.
- Serve potatoes hot with garlic aioli.
