Ingredients

  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut zucchinis into fry-sized sticks.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Beat the egg in a separate bowl.
  5. Dip each zucchini stick into the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini sticks on the baking sheet.
  7. Drizzle with olive oil.
  8. Bake for 20 minutes, flipping halfway, until golden and crispy.
