Description

A quick and healthy vegetable tofu stir-fry packed with protein and fresh veggies. Perfect for a light meal.


Ingredients

  • 1 block (14 oz) firm tofu, pressed and cubed
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp cornstarch (optional, for thickening)
  • 2 green onions, chopped

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add tofu cubes and cook until golden brown on all sides. Remove and set aside.
  3. In the same pan, add garlic and ginger. Stir for 30 seconds until fragrant.
  4. Add bell pepper, carrot, and broccoli. Stir-fry for 4-5 minutes until slightly tender.
  5. Return tofu to the pan. Pour in soy sauce and sesame oil, stirring to coat evenly.
  6. If using cornstarch, mix it with 2 tbsp water and add to the pan. Cook for 1 more minute until slightly thickened.
  7. Garnish with green onions and serve hot over rice or noodles.

Notes

  • Press tofu for at least 15 minutes to remove excess water.
  • Substitute any vegetables you prefer, like snap peas or mushrooms.
  • For extra spice, add red pepper flakes or sriracha.
