Description
A hearty and flavorful Tuscan beef casserole with tender beef, vegetables, and rich herbs.
Ingredients

- 500g beef, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 400g canned tomatoes
- 1 cup beef stock
- 1 tsp rosemary
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onion, carrots, and celery to the pot and cook until softened.
- Stir in garlic, tomatoes, beef stock, rosemary, and thyme.
- Return the beef to the pot and bring to a simmer.
- Cover and cook on low heat for 2 hours, stirring occasionally.
- Season with salt and pepper before serving.
Notes
- For a thicker sauce, simmer uncovered for the last 20 minutes.
- Serve with crusty bread or mashed potatoes.
- Leftovers can be stored in the fridge for up to 3 days.
