A hearty and comforting Turkish red lentil soup, known as mercimek çorbası, perfect for any meal.
Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 1 carrot, diced
- 1 potato, diced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon wedges and fresh parsley for garnish
Instructions
- Rinse the lentils under cold water and drain.
- Heat olive oil in a pot and sauté the onion until soft.
- Add the carrot and potato, cook for 5 minutes.
- Stir in the tomato paste, cumin, and paprika.
- Add the lentils and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 25 minutes until lentils are tender.
- Blend the soup until smooth.
- Season with salt and pepper.
- Serve hot with lemon wedges and fresh parsley.
Notes
- For a creamier texture, add a splash of milk or coconut milk.
- Store leftovers in the fridge for up to 3 days.
