Description

A hearty and comforting Turkish red lentil soup, known as mercimek çorbası, perfect for any meal.


Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 potato, diced
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges and fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and drain.
  2. Heat olive oil in a pot and sauté the onion until soft.
  3. Add the carrot and potato, cook for 5 minutes.
  4. Stir in the tomato paste, cumin, and paprika.
  5. Add the lentils and vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 25 minutes until lentils are tender.
  7. Blend the soup until smooth.
  8. Season with salt and pepper.
  9. Serve hot with lemon wedges and fresh parsley.
