Description
A spicy and sour Thai soup with chicken, mushrooms, and aromatic herbs.
Ingredients

- 500g chicken breast, sliced
- 4 cups chicken broth
- 1 cup straw mushrooms, sliced
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 3 slices galangal
- 2–3 Thai chilies, crushed
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tsp sugar
- 1/4 cup cilantro, chopped
Instructions
- Bring chicken broth to a boil in a pot.
- Add lemongrass, kaffir lime leaves, galangal, and Thai chilies. Simmer for 5 minutes.
- Add chicken and mushrooms. Cook until the chicken is done, about 8 minutes.
- Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning.
- Garnish with cilantro and serve hot.
Notes
- Adjust the number of chilies to control spiciness.
- Use shrimp or tofu instead of chicken for variation.
- Serve with steamed rice for a complete meal.
