Description

A spicy and sour Thai soup with chicken, mushrooms, and aromatic herbs.


Ingredients

  • 500g chicken breast, sliced
  • 4 cups chicken broth
  • 1 cup straw mushrooms, sliced
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 3 slices galangal
  • 23 Thai chilies, crushed
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tsp sugar
  • 1/4 cup cilantro, chopped

Instructions

  1. Bring chicken broth to a boil in a pot.
  2. Add lemongrass, kaffir lime leaves, galangal, and Thai chilies. Simmer for 5 minutes.
  3. Add chicken and mushrooms. Cook until the chicken is done, about 8 minutes.
  4. Stir in fish sauce, lime juice, and sugar. Taste and adjust seasoning.
  5. Garnish with cilantro and serve hot.

Notes

  • Adjust the number of chilies to control spiciness.
  • Use shrimp or tofu instead of chicken for variation.
  • Serve with steamed rice for a complete meal.
