A creamy and refreshing dessert that combines the flavors of Thai iced tea with the smooth texture of panna cotta.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup Thai tea leaves
- 1/2 cup granulated sugar
- 2 tsp unflavored gelatin
- 1/4 cup cold water
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Bloom gelatin in cold water and set aside.
- Heat cream, milk, and Thai tea leaves in a saucepan until steaming.
- Remove from heat and steep for 10 minutes.
- Strain mixture and return to the saucepan.
- Add sugar and salt, then heat until dissolved.
- Stir in bloomed gelatin and vanilla until fully dissolved.
- Pour into serving glasses and chill for at least 4 hours.
- Serve cold, optionally topped with whipped cream.
Notes
- Adjust sugar to taste.
- For a stronger tea flavor, steep longer.
- Use high-quality Thai tea leaves for best results.
