A creamy and refreshing dessert that combines the flavors of Thai iced tea with the smooth texture of panna cotta.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup Thai tea leaves
  • 1/2 cup granulated sugar
  • 2 tsp unflavored gelatin
  • 1/4 cup cold water
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Bloom gelatin in cold water and set aside.
  2. Heat cream, milk, and Thai tea leaves in a saucepan until steaming.
  3. Remove from heat and steep for 10 minutes.
  4. Strain mixture and return to the saucepan.
  5. Add sugar and salt, then heat until dissolved.
  6. Stir in bloomed gelatin and vanilla until fully dissolved.
  7. Pour into serving glasses and chill for at least 4 hours.
  8. Serve cold, optionally topped with whipped cream.
