Description
A flavorful Thai green curry packed with vegetables and creamy coconut milk. This dish is aromatic, spicy, and easy to prepare.

- 1 can (400ml) coconut milk
- 2 tbsp green curry paste
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- 200g firm tofu (cubed)
- 1 tbsp soy sauce
- 1 tsp brown sugar
- 1 lime (juiced)
- 1/2 cup fresh basil leaves
- 1 tbsp vegetable oil
Instructions
- Heat oil in a pan over medium heat.
- Add green curry paste and stir for 1 minute.
- Pour in half the coconut milk and simmer for 2 minutes.
- Add vegetables and tofu, cook for 5 minutes.
- Stir in remaining coconut milk, soy sauce, and brown sugar.
- Simmer for 5-7 minutes until vegetables are tender.
- Add lime juice and basil just before serving.
Notes
- Adjust spice level by adding more or less curry paste.
- Use full-fat coconut milk for a creamier texture.
- Serve with steamed jasmine rice.
