Spicy Thai Green Curry with Coconut Milk in 30 Minutes Flat

Description

A flavorful Thai green curry packed with vegetables and creamy coconut milk. This dish is aromatic, spicy, and easy to prepare.


Ingredients

Scale
  • 1 can (400ml) coconut milk
  • 2 tbsp green curry paste
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 200g firm tofu (cubed)
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 lime (juiced)
  • 1/2 cup fresh basil leaves
  • 1 tbsp vegetable oil

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add green curry paste and stir for 1 minute.
  3. Pour in half the coconut milk and simmer for 2 minutes.
  4. Add vegetables and tofu, cook for 5 minutes.
  5. Stir in remaining coconut milk, soy sauce, and brown sugar.
  6. Simmer for 5-7 minutes until vegetables are tender.
  7. Add lime juice and basil just before serving.

Notes

  • Adjust spice level by adding more or less curry paste.
  • Use full-fat coconut milk for a creamier texture.
  • Serve with steamed jasmine rice.
