Ingredients

- 8 oz noodles of your choice
- 1/2 cup cashews, roasted
- 3 tbsp soy sauce
- 2 tbsp sriracha
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1/4 cup water
- 3 scallions, thinly sliced
- 1 tbsp vegetable oil
- 1 clove garlic, minced
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Blend cashews, soy sauce, sriracha, rice vinegar, honey, and water until smooth.
- Heat oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Pour the cashew sauce into the pan and cook for 2 minutes, stirring.
- Add the cooked noodles and toss to coat evenly.
- Garnish with sliced scallions before serving.
Notes
- Adjust sriracha to control spice level.
- Substitute honey with maple syrup for a vegan option.
- Use gluten-free noodles if needed.
