Description

A quick and flavorful noodle dish with spicy cashew sauce and fresh scallions.


Ingredients

  • 8 oz noodles of your choice
  • 1/2 cup cashews, roasted
  • 3 tbsp soy sauce
  • 2 tbsp sriracha
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/4 cup water
  • 3 scallions, thinly sliced
  • 1 tbsp vegetable oil
  • 1 clove garlic, minced

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Blend cashews, soy sauce, sriracha, rice vinegar, honey, and water until smooth.
  3. Heat oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
  4. Pour the cashew sauce into the pan and cook for 2 minutes, stirring.
  5. Add the cooked noodles and toss to coat evenly.
  6. Garnish with sliced scallions before serving.
