- 2 cups short-grain rice
- 1 pinch saffron threads
- 1 lb mussels, cleaned
- 200g chorizo, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chorizo and cook until browned. Remove and set aside.
- In the same pan, sauté onion, garlic, and bell pepper until softened.
- Add rice, saffron, and smoked paprika. Stir to coat the rice.
- Pour in chicken broth and bring to a simmer.
- Arrange mussels and chorizo on top of the rice.
- Cover and cook for 20 minutes, or until rice is tender and mussels have opened.
- Season with salt and pepper. Serve hot.
