Ingredients

  • 2 cups short-grain rice
  • 1 pinch saffron threads
  • 1 lb mussels, cleaned
  • 200g chorizo, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chorizo and cook until browned. Remove and set aside.
  3. In the same pan, sauté onion, garlic, and bell pepper until softened.
  4. Add rice, saffron, and smoked paprika. Stir to coat the rice.
  5. Pour in chicken broth and bring to a simmer.
  6. Arrange mussels and chorizo on top of the rice.
  7. Cover and cook for 20 minutes, or until rice is tender and mussels have opened.
  8. Season with salt and pepper. Serve hot.
