- 1 lb shrimp, peeled and deveined
- 2 cups corn kernels
- 1 onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 1 red bell pepper, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, garlic, celery, and bell pepper. Sauté for 5 minutes.
- Stir in corn, thyme, and paprika. Cook for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add shrimp and cook until pink, about 3-4 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot.
