Ingredients

  • 2 cups corn kernels
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, garlic, celery, and bell pepper. Sauté for 5 minutes.
  3. Stir in corn, thyme, and paprika. Cook for 2 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add shrimp and cook until pink, about 3-4 minutes.
  7. Stir in heavy cream and season with salt and pepper.
  8. Serve hot.
