Description

A simple and flavorful Greek-inspired dish with marinated chicken and vegetables cooked together on a sheet pan for easy cleanup.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced

Instructions

  1. Preheat oven to 425°F.
  2. Mix olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  3. Toss chicken with half the marinade.
  4. Toss vegetables with remaining marinade.
  5. Arrange chicken and vegetables on a sheet pan.
  6. Bake for 25 minutes or until chicken reaches 165°F.
  7. Serve with pita bread and tzatziki sauce.
