Description
A classic Roman-style chicken dish featuring tender chicken thighs braised in a rich tomato sauce with bell peppers.

- 4 chicken thighs, bone-in and skin-on
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with salt and pepper. Brown them in the skillet for 4-5 minutes per side. Remove and set aside.
- In the same skillet, sauté onions and bell peppers until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in crushed tomatoes, chicken broth, oregano, and basil.
- Return chicken to the skillet, nestling it into the sauce.
- Cover and simmer for 25-30 minutes until chicken is cooked through.
- Serve hot.
Notes
- Use bone-in, skin-on thighs for better flavor.
- Simmer on low heat to prevent sauce from burning.
- Pair with crusty bread or pasta.
