Ingredients

- 1 cup quinoa
- 2 cups water
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup black beans, rinsed
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in 2 cups of water for 15 minutes or until fluffy.
- Let quinoa cool slightly.
- Combine quinoa, avocado, cherry tomatoes, black beans, red onion, and cilantro in a bowl.
- Drizzle with lime juice and olive oil.
- Season with salt and pepper.
- Toss gently and serve.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add grilled chicken or tofu for extra protein.
- Adjust lime and salt to taste.
