Description

A nutritious and filling quinoa and avocado bowl packed with protein and healthy fats.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in 2 cups of water for 15 minutes or until fluffy.
  3. Let quinoa cool slightly.
  4. Combine quinoa, avocado, cherry tomatoes, black beans, red onion, and cilantro in a bowl.
  5. Drizzle with lime juice and olive oil.
  6. Season with salt and pepper.
  7. Toss gently and serve.

Notes

  • Store leftovers in an airtight container for up to 2 days.
  • Add grilled chicken or tofu for extra protein.
  • Adjust lime and salt to taste.
