Ingredients

- 1 rack of lamb, frenched
- 1 cup shelled pistachios, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season the rack of lamb with salt and pepper.
- Heat olive oil in a pan and sear the lamb on all sides until browned.
- Mix pistachios, garlic, and parsley in a bowl.
- Brush the lamb with Dijon mustard, then press the pistachio mixture onto the meat.
- Place the lamb on a baking sheet and roast for 20-25 minutes for medium-rare.
- Let rest for 5 minutes before slicing and serving.
