Description

Ingredients

  • 2 cups basmati rice
  • 1/4 cup barberries
  • 1/4 cup slivered almonds
  • 1/4 cup pistachios
  • 1/4 cup dried apricots, chopped
  • 1/4 cup golden raisins
  • 1 large onion, thinly sliced
  • 1/2 tsp saffron threads
  • 3 tbsp butter
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground cumin
  • Salt to taste
  • 4 cups water

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Soak the rice in water for 30 minutes, then drain.
  3. Dissolve saffron in 2 tbsp warm water and set aside.
  4. Melt butter in a large pot over medium heat. Add onions and sauté until golden.
  5. Add almonds, pistachios, apricots, raisins, and barberries. Cook for 2-3 minutes.
  6. Stir in cinnamon, cardamom, cumin, and salt.
  7. Add the drained rice and mix well.
  8. Pour in 4 cups of water and bring to a boil.
  9. Reduce heat, cover, and simmer for 20 minutes or until rice is tender.
  10. Drizzle saffron water over the rice and fluff gently before serving.
