Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cloves garlic (minced)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs with salt, pepper, and oregano.
  3. Brown chicken for 3-4 minutes per side, then remove from skillet.
  4. Add minced garlic to the skillet and cook for 30 seconds.
  5. Stir in rice, lemon zest, and lemon juice.
  6. Pour in chicken broth and bring to a simmer.
  7. Return chicken to the skillet, cover, and cook for 20 minutes.
  8. Remove from heat and let rest for 5 minutes.
  9. Sprinkle with fresh parsley before serving.
