- 4 boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cloves garlic (minced)
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken thighs with salt, pepper, and oregano.
- Brown chicken for 3-4 minutes per side, then remove from skillet.
- Add minced garlic to the skillet and cook for 30 seconds.
- Stir in rice, lemon zest, and lemon juice.
- Pour in chicken broth and bring to a simmer.
- Return chicken to the skillet, cover, and cook for 20 minutes.
- Remove from heat and let rest for 5 minutes.
- Sprinkle with fresh parsley before serving.
Notes
- Use fresh lemon juice for best flavor.
- Do not lift the lid while cooking.
- Let rice rest before serving to absorb extra moisture.
