Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until browned, about 5 minutes per side.
  3. Remove chicken and set aside.
  4. In the same skillet, sauté onions and mushrooms until soft, about 5 minutes.
  5. Add garlic and thyme, cook for 1 minute.
  6. Pour in chicken broth and bring to a simmer.
  7. Return chicken to the skillet and cook for 10 minutes.
  8. Stir in heavy cream and season with salt and pepper.
  9. Cook for 2 more minutes, then serve.
