- 1 cup dried lentils, rinsed
- 1/2 cup chickpeas, soaked overnight
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped celery
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 1 tsp ground turmeric
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp black pepper
- 1/2 tsp salt
- 6 cups vegetable or chicken broth
- 2 tbsp olive oil
- 1/4 cup vermicelli or rice (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and tomatoes. Cook until softened.
- Stir in turmeric, ginger, cinnamon, black pepper, and salt.
- Add lentils, chickpeas, and broth. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add vermicelli or rice if using. Cook for another 10 minutes.
- Stir in cilantro and parsley before serving.
Notes
- Soak chickpeas overnight for best texture.
- Adjust spices to taste.
- Garnish with lemon wedges for extra flavor.
