Ingredients

  • 1 cup dried lentils, rinsed
  • 1/2 cup chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped celery
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 6 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 1/4 cup vermicelli or rice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and tomatoes. Cook until softened.
  3. Stir in turmeric, ginger, cinnamon, black pepper, and salt.
  4. Add lentils, chickpeas, and broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Add vermicelli or rice if using. Cook for another 10 minutes.
  7. Stir in cilantro and parsley before serving.

Notes

  • Soak chickpeas overnight for best texture.
  • Adjust spices to taste.
  • Garnish with lemon wedges for extra flavor.
