Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. Cook it in 2 cups of boiling water for 15 minutes, then let it cool.
- In a large bowl, combine cucumber, bell pepper, red onion, cherry tomatoes, olives, and parsley.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Sprinkle feta cheese on top if using.
- Serve chilled or at room temperature.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a vegan version, omit feta cheese.
- Add grilled chicken for extra protein.
