  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a madeleine pan.
  2. Whisk melted butter and sugar in a bowl until smooth.
  3. Add eggs, lemon zest, lemon juice, and vanilla. Mix well.
  4. Sift flour, baking powder, and salt into the wet ingredients. Fold gently.
  5. Stir in poppy seeds until evenly distributed.
  6. Spoon batter into madeleine molds, filling each 3/4 full.
  7. Bake for 10–12 minutes or until edges turn golden.
  8. Cool for 2 minutes in the pan, then transfer to a wire rack.
