- 1/2 cup unsalted butter (melted and cooled)
- 2/3 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon poppy seeds
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C). Grease a madeleine pan.
- Whisk melted butter and sugar in a bowl until smooth.
- Add eggs, lemon zest, lemon juice, and vanilla. Mix well.
- Sift flour, baking powder, and salt into the wet ingredients. Fold gently.
- Stir in poppy seeds until evenly distributed.
- Spoon batter into madeleine molds, filling each 3/4 full.
- Bake for 10–12 minutes or until edges turn golden.
- Cool for 2 minutes in the pan, then transfer to a wire rack.
Notes
- Chill the batter for 30 minutes for better rise.
- Use fresh lemon zest for the best flavor.
- Dust with powdered sugar before serving if desired.
