Ingredients

  • 2 lemons (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Sprinkle salt, pepper, rosemary, and thyme evenly.
  5. Stuff the cavity with lemon slices and minced garlic.
  6. Place chicken in a roasting pan breast-side up.
  7. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before carving.
