Description
A refreshing and nutritious quinoa salad packed with lemon, herbs, and chickpeas.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 lemon, juiced and zested
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- Cook quinoa with water according to package instructions. Let cool.
- In a large bowl, mix chickpeas, lemon juice, lemon zest, and olive oil.
- Add cooked quinoa, parsley, mint, cucumber, and red onion.
- Toss well and season with salt and pepper.
- Serve chilled or at room temperature.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add avocado or feta cheese for extra flavor.
- Use lime instead of lemon for a different taste.
