Description

A refreshing and nutritious quinoa salad packed with lemon, herbs, and chickpeas.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. Cook quinoa with water according to package instructions. Let cool.
  3. In a large bowl, mix chickpeas, lemon juice, lemon zest, and olive oil.
  4. Add cooked quinoa, parsley, mint, cucumber, and red onion.
  5. Toss well and season with salt and pepper.
  6. Serve chilled or at room temperature.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Add avocado or feta cheese for extra flavor.
  • Use lime instead of lemon for a different taste.
