- 4 cloves garlic, minced
- 2 lemons, sliced
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- In a small bowl, mix garlic, olive oil, salt, pepper, thyme, and rosemary.
- Rub the mixture evenly over the chicken, including under the skin.
- Place lemon slices inside the chicken cavity.
- Put the chicken in a roasting pan and roast for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.
