- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tbsp harissa paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix sweet potatoes with olive oil, harissa paste, salt, pepper, cumin, and smoked paprika.
- Spread the coated sweet potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway, until tender and slightly crispy.
- Serve warm as a side dish or over grains.
Notes
- Adjust harissa amount for more or less heat.
- Store leftovers in an airtight container for up to 3 days.
- Pair with yogurt or tahini sauce for balance.
