Description

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup Kalamata olives, pitted
  • 4 oz feta cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, tomatoes, cucumber, red onion, bell pepper, olives, and feta.
  3. Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Pour dressing over the salad and toss to combine.
  5. Chill for at least 30 minutes before serving.
