Ingredients

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fresh turmeric, grated
- 4 cups chicken broth
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/2 tsp coriander
- Fresh cilantro (optional)
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, ginger, and turmeric. Sauté for 2 minutes.
- Add chicken breasts and brown for 3 minutes per side.
- Pour in chicken broth and bring to a boil.
- Reduce heat, add carrot and celery, then simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Season with salt, pepper, cumin, and coriander.
- Simmer for another 5 minutes.
- Garnish with cilantro if desired.
Notes
- Use fresh turmeric for the best flavor.
- Adjust spices to your preference.
- Store leftovers in the fridge for up to 3 days.
