- 2 large pita breads, toasted and broken into pieces
- 2 cups chopped romaine lettuce
- 1 cup diced cucumbers
- 1 cup diced tomatoes
- 1/2 cup sliced radishes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup sliced green onions
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon sumac
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F. Cut the pita bread into small squares and toast until crispy, about 10 minutes.
- In a large bowl, combine the lettuce, cucumbers, tomatoes, radishes, parsley, mint, and green onions.
- In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Add the toasted pita pieces just before serving and toss lightly.
Notes
- For extra flavor, add a pinch of za’atar to the dressing.
- Serve immediately to keep the pita crispy.
- Customize with additional vegetables like bell peppers or olives.
