A classic Middle Eastern dish featuring crispy falafel served with creamy tahini sauce and warm pita bread.
Ingredients

- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 3 garlic cloves
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp all-purpose flour
- Oil for frying
- 4 pita breads
- 1/2 cup tahini
- 2 tbsp lemon juice
- 1/4 cup water
- 1 garlic clove (for sauce)
- Pinch of salt (for sauce)
Instructions
- Drain soaked chickpeas and pat dry.
- Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, and salt in a food processor.
- Add flour and pulse until the mixture holds together.
- Shape into small balls and flatten slightly.
- Heat oil in a pan and fry falafel until golden brown.
- For the sauce, whisk tahini, lemon juice, water, garlic, and salt until smooth.
- Warm pita breads.
- Serve falafel with tahini sauce and pita.
Notes
- Don’t use canned chickpeas—they make the falafel too soft.
- Fry in small batches to avoid crowding the pan.
- Adjust sauce thickness by adding more water if needed.
