Description

A classic Middle Eastern dish featuring crispy falafel served with creamy tahini sauce and warm pita bread.


Ingredients

  • 1 cup dried chickpeas (soaked overnight)
  • 1 small onion, chopped
  • 3 garlic cloves
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp all-purpose flour
  • Oil for frying
  • 4 pita breads
  • 1/2 cup tahini
  • 2 tbsp lemon juice
  • 1/4 cup water
  • 1 garlic clove (for sauce)
  • Pinch of salt (for sauce)

Instructions

  1. Drain soaked chickpeas and pat dry.
  2. Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, and salt in a food processor.
  3. Add flour and pulse until the mixture holds together.
  4. Shape into small balls and flatten slightly.
  5. Heat oil in a pan and fry falafel until golden brown.
  6. For the sauce, whisk tahini, lemon juice, water, garlic, and salt until smooth.
  7. Warm pita breads.
  8. Serve falafel with tahini sauce and pita.

Notes

  • Don’t use canned chickpeas—they make the falafel too soft.
  • Fry in small batches to avoid crowding the pan.
  • Adjust sauce thickness by adding more water if needed.
