Ingredients

  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper cups.
  2. Mix mashed bananas and melted butter in a bowl.
  3. Stir in sugar, beaten egg, and vanilla extract.
  4. Sprinkle baking soda and salt over the mixture and mix well.
  5. Add flour and stir until just combined.
  6. Pour batter into muffin cups, filling 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes before serving.
