Deviled potatoes are a flavorful twist on classic deviled eggs, using roasted potato halves filled with a creamy, tangy mixture.

- 8 medium potatoes, halved
- 2 tbsp olive oil
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp white vinegar
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh chives, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato halves with olive oil and place on a baking sheet.
- Roast for 30 minutes until tender. Let cool slightly.
- Scoop out the center of each potato half, leaving a thin shell.
- Mash the scooped-out potato with mayonnaise, mustard, vinegar, paprika, salt, and pepper.
- Fill each potato shell with the mixture.
- Sprinkle with chives and serve.
Notes
- Use waxy potatoes for better texture.
- Adjust mustard and vinegar to taste.
- Can be served warm or chilled.
