- 1 onion, diced
- 3 garlic cloves, minced
- 28 oz canned tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Pour in canned tomatoes and vegetable broth. Simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in heavy cream and fresh basil.
- Season with salt and pepper. Serve warm.
