A comforting and classic chicken noodle soup that’s perfect for cold days or when you need a quick, nutritious meal.


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups water
  • 1 lb boneless, skinless chicken breasts
  • 2 cups egg noodles
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add chicken breasts, salt, pepper, thyme, and bay leaf. Simmer for 15 minutes.
  6. Remove chicken, shred it, and return to the pot.
  7. Add egg noodles and cook for 8 minutes.
  8. Stir in parsley and serve hot.

Notes

  • Use pre-cooked chicken to save time.
  • Add extra vegetables if desired.
  • Store leftovers in the fridge for up to 3 days.
