Ingredients

- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups water
- 1 lb boneless, skinless chicken breasts
- 2 cups egg noodles
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and water. Bring to a boil.
- Add chicken breasts, salt, pepper, thyme, and bay leaf. Simmer for 15 minutes.
- Remove chicken, shred it, and return to the pot.
- Add egg noodles and cook for 8 minutes.
- Stir in parsley and serve hot.
Notes
- Use pre-cooked chicken to save time.
- Add extra vegetables if desired.
- Store leftovers in the fridge for up to 3 days.
