Ingredients

Scale
  • 4 cups kale, chopped
  • 1 orange, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1/4 cup sliced almonds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the kale, then chop it into bite-sized pieces.
  2. Peel and slice the orange and grapefruit.
  3. In a large bowl, combine kale, orange slices, grapefruit slices, and almonds.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  5. Pour the dressing over the salad and toss well.
  6. Serve immediately or chill for 10 minutes before serving.
