Ingredients
Scale
- 4 cups kale, chopped
- 1 orange, peeled and sliced
- 1 grapefruit, peeled and sliced
- 1/4 cup sliced almonds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry the kale, then chop it into bite-sized pieces.
- Peel and slice the orange and grapefruit.
- In a large bowl, combine kale, orange slices, grapefruit slices, and almonds.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Serve immediately or chill for 10 minutes before serving.

- Massage the kale with a bit of olive oil to soften it before adding other ingredients.
