- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 cup brown sugar
- 1 tbsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix mashed bananas, melted butter, sugar, egg, and vanilla.
- Stir in baking soda, flour, and salt until just combined.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Pour half the batter into the loaf pan. Sprinkle half the cinnamon-sugar mix. Repeat.
- Use a knife to swirl the cinnamon mix into the batter.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use very ripe bananas for the best flavor.
- Do not overmix the batter to keep the bread tender.
- Store in an airtight container for up to 3 days.
