Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup crumbled feta cheese
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine chickpeas, feta cheese, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to 2 hours before serving.
Notes
- For a creamier texture, mash some of the chickpeas lightly.
- Add cherry tomatoes or olives for extra flavor.
- Use vegan feta for a dairy-free version.
