- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
Instructions
- Pound chicken breasts to even thickness and season with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil and butter in a large skillet over medium heat.
- Cook chicken for 5-6 minutes per side until golden brown. Remove and set aside.
- Add mushrooms to the skillet and cook for 5 minutes until softened.
- Stir in garlic and cook for 30 seconds.
- Pour in Marsala wine and chicken broth, scraping up browned bits.
- Simmer for 5 minutes until slightly reduced.
- Stir in heavy cream and return chicken to the skillet.
- Cook for 3-4 minutes until chicken is heated through.
- Garnish with parsley before serving.
Notes
- Use dry Marsala wine for best flavor.
- Slice mushrooms evenly for even cooking.
- Serve over pasta or mashed potatoes.
