Ingredients

  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup diced pears

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk flour, sugar, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat egg, milk, oil, and vanilla.
  4. Pour wet ingredients into dry ingredients. Stir until just combined.
  5. Fold in diced pears gently.
  6. Divide batter evenly into muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use ripe but firm pears for best texture.
  • Replace milk with almond milk for a dairy-free option.
