Ingredients

- 1 large cucumber, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped
Instructions
- Wash and prepare the carrots and cucumber.
- In a large bowl, combine the carrots and cucumber.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the vegetables and toss well.
- Sprinkle with fresh parsley before serving.

- For extra crunch, add toasted sesame seeds.
- Adjust honey and lemon to balance sweetness and tanginess.
