Description

Delicate French madeleines flavored with cardamom and orange zest for a fragrant twist.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tbsp orange zest
  • 1 tsp ground cardamom
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375°F (190°C). Grease a madeleine pan.
  2. Whisk flour, baking powder, salt, and cardamom in a bowl.
  3. Beat eggs and sugar until pale and thick.
  4. Fold in melted butter and orange zest.
  5. Gently mix dry ingredients into wet ingredients.
  6. Spoon batter into prepared pan, filling each mold 3/4 full.
  7. Bake 8-10 minutes until edges are golden.
  8. Cool in pan 2 minutes, then transfer to a wire rack.

Notes

  • Chill batter 30 minutes for more defined humps.
  • Dust with powdered sugar before serving.
  • Store in an airtight container up to 3 days.
