Description

A hearty beef stew with tender meat and vegetables in a rich broth.


Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove from the pot.
  3. Add onions and sauté until soft.
  4. Return beef to the pot and add carrots, potatoes, broth, tomato paste, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  6. Season with salt and pepper before serving.

Notes

  • For thicker stew, mix 1 tbsp flour with water and stir in during cooking.
  • Leftovers taste even better the next day.
