Description
A hearty beef stew with tender meat and vegetables in a rich broth.
Ingredients

- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, cubed
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove from the pot.
- Add onions and sauté until soft.
- Return beef to the pot and add carrots, potatoes, broth, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Season with salt and pepper before serving.
Notes
- For thicker stew, mix 1 tbsp flour with water and stir in during cooking.
- Leftovers taste even better the next day.
