Description

A classic Russian dish featuring tender beef strips cooked in a creamy mushroom sauce, served over noodles or rice.


Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons butter
  • 1 onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add beef strips and cook until browned. Remove and set aside.
  3. In the same skillet, sauté onions and mushrooms until softened.
  4. Add garlic and cook for 1 minute.
  5. Sprinkle flour over the mixture and stir well.
  6. Slowly pour in beef broth while stirring to avoid lumps.
  7. Add Worcestershire sauce and mustard. Simmer for 5 minutes.
  8. Return beef to the skillet and cook for 2 more minutes.
  9. Stir in sour cream and heat through (do not boil).
  10. Season with salt and pepper. Garnish with parsley.

  • Do not boil after adding sour cream to prevent curdling.
  • Serve with egg noodles or mashed potatoes.
