Ingredients

- 1 lb beef stew meat, cubed
- 1 cup pearl barley
- 4 cups beef broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes until softened.
- Stir in barley, beef broth, salt, pepper, bay leaf, and thyme.
- Bring to a boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
- Remove bay leaf before serving.
Notes
- For extra flavor, sear the beef in batches.
- Add more broth if the stew thickens too much.
- Store leftovers in the fridge for up to 3 days.
