Description

Ingredients

  • 1 lb beef stew meat, cubed
  • 1 cup pearl barley
  • 4 cups beef broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Add onion, carrots, celery, and garlic. Cook for 5 minutes until softened.
  4. Stir in barley, beef broth, salt, pepper, bay leaf, and thyme.
  5. Bring to a boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
  6. Remove bay leaf before serving.

Notes

  • For extra flavor, sear the beef in batches.
  • Add more broth if the stew thickens too much.
  • Store leftovers in the fridge for up to 3 days.
