- 2 boneless, skinless chicken breasts
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 egg
- 1/4 cup milk
- 2 cups vegetable oil for frying
- 2 cups cooked rice
- 1 cup shredded lettuce
- 1/2 cup diced cucumber
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tsp honey
Instructions
- Cut chicken into bite-sized pieces.
- In a bowl, mix cornstarch, flour, salt, pepper, garlic powder, and paprika.
- In another bowl, whisk egg and milk.
- Coat chicken in the flour mixture, then dip in the egg mixture, then back in the flour mixture.
- Heat oil in a pan over medium-high heat.
- Fry chicken until golden and cooked through, about 5-6 minutes.
- Drain on paper towels.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and honey.
- Assemble bowls with rice, lettuce, cucumber, carrots, and chicken.
- Drizzle with sauce and top with green onions.
