Ingredients

- 2 cups rolled oats
- 1 cup pumpkin puree
- 1 1/2 cups milk
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp baking powder
Instructions
- Preheat oven to 375°F (190°C).
- Mix all ingredients in a large bowl.
- Pour mixture into a greased 8×8 baking dish.
- Bake for 35-40 minutes until set.
- Let cool for 5 minutes before serving.

- Use quick oats for softer texture
